Cafe-Style Roasted Potatoes Recipe


I do not like the kitchen. (said forcefully while still making 10,000+ cinnamon buns every year)

Not in a ā€œteehee I burn toastā€ way.

In a very real, very committed: ā€œIf someone else could handle this forever, that’d be greatā€ kind of way.

If you’ve been here a while… you already know this. šŸ˜

If you're new around here - it’s an important bit of info you should know.

Now.

Back when I first stepped into cafe life, there were LOTS of tiny details missing. The most problematic?

No roasted potato recipe.

None.

Just a tray. A pile of potatoes. And a whole lot of… confidence?

So I did what anyone would do when they don’t have a clue what they’re doing:

Eyeballed it.

Oil? Sure. Salt? Why not. Spices? Feels right.

And by ā€œfeels rightā€ I mean:

šŸ‘‰ Sometimes they were swimming in oil

šŸ‘‰ Sometimes they tasted like the ocean

šŸ‘‰ Sometimes… absolutely nothing at all.

Consistency? Never heard of her.

And then there was the infamous potato moment (pre-me, but still part of cafe legend that's brought up regularly):

Someone (no names please) used Cajun spice instead of paprika.

They opened the oven and —

Immediate regret.

Eyes watering. People backing away. One brave soul still trying to plate them like: ā€œMaybe nobody will notice?ā€

They noticed Reader.

But here’s where it gets curious…

Despite having no solid recipe; just oil and a prayer. Somewhere along the way, these potatoes became elite.

Like… customer & staff obsession elite. HOW?

We make them constantly. We eat them constantly.

And if one hits the floor?

Again… if you’ve been here a while… you already know what happens.

A brief pause… eye contact is made… and suddenly it’s a competitive sport.

Floor potatoes. We stand by them. We thrive.

Me being me; when I'm making elite status anything, I like to have a bit more than oil and a prayer.

I needed (for me and for everyone else) to stop guessing.

When we stopped throwing random amounts of everything on a tray and hoping for the best… and made the recipe simple and repeatable - our elite status roasted potatoes - went from elite to super-elite (?).

(I may have just made that up)

Now, you know I can't leave without a side of nutrition advice thrown in - so, let me tell you about THE POTATO!

Potatoes have been dragged through the mud for YEARS -

ā€œToo starchy.ā€ ā€œToo many carbs.ā€ ā€œThey come from the ground" (so clearly suspicious šŸ™„)

Potatoes are an incredible source of fuel for you body. (and for potato guns at 3am - which is a details-are-hazy newsletter topic for another time)

Here’s what they bring to the table:

šŸ„” They keep you full (hello fewer snack attacks)

šŸ„” Packed with potassium (more than a banana, just saying)

šŸ„” Great source of fiber (when you eat the skin - never peel away the good stuff - even when making mashed potatoes)

šŸ„” Naturally gluten-free & vegan (everyone’s invited)

šŸ„” They give you actual energy (not the fake kind that disappears in 20 minutes)

We’re not villainizing potatoes over here. We’re roasting them. Repeatedly.

And…
