I do not like the kitchen. (said forcefully while still making 10,000+ cinnamon buns every year) Not in a āteehee I burn toastā way. In a very real, very committed: āIf someone else could handle this forever, thatād be greatā kind of way. If youāve been here a while⦠you already know this. š If you're new around here - itās an important bit of info you should know. Now. Back when I first stepped into cafe life, there were LOTS of tiny details missing. The most problematic? No roasted potato recipe. None. Just a tray. A pile of potatoes. And a whole lot of⦠confidence? So I did what anyone would do when they donāt have a clue what theyāre doing: Eyeballed it. Oil? Sure. Salt? Why not. Spices? Feels right. And by āfeels rightā I mean: š Sometimes they were swimming in oil š Sometimes they tasted like the ocean š Sometimes⦠absolutely nothing at all. Consistency? Never heard of her. And then there was the infamous potato moment (pre-me, but still part of cafe legend that's brought up regularly): Someone (no names please) used Cajun spice instead of paprika. They opened the oven and ā Immediate regret. Eyes watering. People backing away. One brave soul still trying to plate them like: āMaybe nobody will notice?ā They noticed Reader. But hereās where it gets curious⦠Despite having no solid recipe; just oil and a prayer. Somewhere along the way, these potatoes became elite. Like⦠customer & staff obsession elite. HOW? We make them constantly. We eat them constantly. And if one hits the floor? Again⦠if youāve been here a while⦠you already know what happens. A brief pause⦠eye contact is made⦠and suddenly itās a competitive sport. Floor potatoes. We stand by them. We thrive. Me being me; when I'm making elite status anything, I like to have a bit more than oil and a prayer. I needed (for me and for everyone else) to stop guessing. When we stopped throwing random amounts of everything on a tray and hoping for the best⦠and made the recipe simple and repeatable - our elite status roasted potatoes - went from elite to super-elite (?). (I may have just made that up) If you've always dreamt of making roasted potatoes taste just like ours, today is your day! Iām giving you the recipe. ā Click here to get the full roasted potato recipeā Because if I can make something in the kitchen that works consistently⦠there is hope for all of us and it must be shared. Now, you know I can't leave without a side of nutrition advice thrown in - so, let me tell you about THE POTATO! Potatoes have been dragged through the mud for YEARS - āToo starchy.ā āToo many carbs.ā āThey come from the ground" (so clearly suspicious š) Potatoes are an incredible source of fuel for you body. (and for potato guns at 3am - which is a details-are-hazy newsletter topic for another time) Hereās what they bring to the table: š„ They keep you full (hello fewer snack attacks) š„ Packed with potassium (more than a banana, just saying) š„ Great source of fiber (when you eat the skin - never peel away the good stuff - even when making mashed potatoes) š„ Naturally gluten-free & vegan (everyoneās invited) š„ They give you actual energy (not the fake kind that disappears in 20 minutes) Weāre not villainizing potatoes over here. Weāre roasting them. Repeatedly. And⦠This recipe? Itās just one piece of whatās coming. Weāve been quietly pulling together a cookbook filled with: ā Cafe-inspired favourites ā Home-style - doable meals ā Zero āyou need 19 ingredients youāve never heard ofā energy Filled with food that fits into real life. You can make these even if you hate the kitchen! Thatās where weāre headed. Nat - your champion floor-potato defender š„ P.S. If you've tried our roasted potatoes, hit reply and tell me what you think! AND, if you try this recipe, send me pics! I love it all and I respond to every message. |
